So we made it through January, and we’re on our way to Spring!

Life just never seems to slow down though, does it?

For the last month our kids have been doing skating lessons twice a week, and it feels like we’re running them all over the place, all the time (and I know things will only get busier as they get older!).

I am always on the lookout for easy breakfast ideas that are going to keep us going, and this Breakfast in a Mug is a winner.

I used the Savory Herb flavour, and the seasoning pack adds a ton of flavor to everything, so you don’t have to mess around with salt or spices — just stir it up and microwave!

I’ve included instructions to bake as a regular full-sized breakfast casserole down below as I know that not everyone has a microwave. It is just as good either way!

One of the best things about this breakfast in a mug recipe is that it’s just as perfect for a quick lunch or dinner, especially when you’re dining solo. You can have all the ingredients chopped and ready in the fridge, and get a healthy meal on the table in a matter of minutes.

Tips for making this Breakfast in a Mug recipe:

  • Spray your mug — we don’t want to lose half of our breakfast to mug stickage!
  • I choose to use chopped ham for this recipe, as it doesn’t require any additional cooking. You could swap it for bacon or bacon bits, cooked breakfast sausages, or sauteed mushrooms for a delicious vegetarian version.
  • If you prefer, you can make this recipe with egg whites alone, but the yolks really have a lot of great things to offer so we always use whole eggs.
  • Feel free to mix up the cheese — use whatever you have on hand or spice it up with a Monterey Jack with jalapeno (my husband’s favorite!)

How to microwave eggs:

Eggs are so easy to cook in the microwave! We often use little ramekins to cook eggs for breakfast sandwiches, and my husband has a microwave omelette cooker that gets used often.

When I microwave eggs I like to cook about half way, then give it a little stir so everything is evenly dispersed and you don’t end up with all your breakfast casserole goodies at the bottom of your mug.

They don’t take long to cook at all but it will depend on the power of your microwave and the size and shape of your mug. I find 1-2 minutes is usually perfect.

How to make this breakfast casserole recipe in a regular baking dish:

You can easily adapt this breakfast casserole recipe to bake in a regular baking dish.

You can multiply the recipe by 4, and bake in an 8×8″ baking dish for 25-35 minutes, or until eggs are set.

Ingredients

  • 3 Little Potatoes from Microwave Ready pack (I used Savory Herb)
  • 2 eggs
  • 1/3 cup diced, cooked ham
  • 2 tablespoons shredded cheddar cheese
  • 1 tablespoon milk
  • 1 green onion sliced
  • 1 pinch salt

Instructions

  • Cook Little Potato Company Microwave Ready pack according to package direction. Stir in seasoning and set aside to cool slightly.

  • Chop up 3 Little Potatoes and add to a lightly greased mug (14-16oz recommended).

  • Whisk eggs slightly and add to the mug, along with ham, cheese, milk, onion and salt. Stir to combine.

  • Microwave on high in 40 second intervals, stirring the first two times (while there is quite a bit of uncooked egg in the mug), until eggs are completely set.

  • Serve.

    Hello! I love this recipe, but I can’t eat potatoes. So I am wondering if you could recommend a similar seasoning flavor (e.g. one of the Mrs. Dash seasonings, etc) that I could use to replace the missing seasoning from the potatoes. Then, how much would I use in the mug recipe?

    Also, have you tried freezing this? I am thinking that this would be great to make up many of the egg mug mix servings and freeze each serving in a sandwich bag. Then defrost/heat in a mug the morning of…thoughts?

      You could add a bit of the garlic herb Mrs. Dash seasoning and it would be great! Even just a bit of salt and pepper would be fine 🙂
